Description

Winter Thyme (Thymus vulgaris) is a hardy, evergreen herb prized for its intensely aromatic foliage, robust flavour, and resilience in cooler climates. Native to the Mediterranean, this compact perennial has adapted exceptionally well to South African winters, making it an ideal year-round culinary and medicinal herb for home gardens, permaculture plots, and containers.

Reaching a height of approximately 20–30 cm with a spread of 30–40 cm, Winter Thyme develops a low-growing, bushy form covered in small, grey-green leaves and delicate pale purple to pink flowers in late spring and early summer. It is more cold-tolerant than common thyme and continues to grow actively through winter, particularly in temperate and inland regions of South Africa.

How To Use

Winter Thyme flourishes under the following conditions:

  • Season: Spring and Autumn
  • Temperature: 16-28°C
  • Germinate: 10-21 days
  • Depth: 2-3 mm
  • Spacing: 22x22 cm
  • Harvest: 70-90 days
  • Height: 20-30 cm
  • Flowering Season: Late spring to midsummer
  • Exposure: Full sun (6–8 hours daily)

Ideal Growing Environment 

  • Prefers a well drained substrate with amendments or pre-made soil containing all the necessary base additives. Ideal pH 6.0–8.0. Avoid clay-rich or soggy areas.
  • Low water needs. Water only when topsoil is dry—avoid overwatering.
  • Does not require heavy feeding. A light compost dressing once a year is sufficient.
  • Thrives in warm, dry areas of South Africa; frost-tolerant when mature but benefits from protection in harsh winters.
  • Prefers low to moderate humidity (40–65%). High humidity with poor airflow may cause mildew.
  • Rarely affected. Natural oils deter most insects. Watch for root rot in poorly drained soils.
  • Performs well in raised beds, containers, hanging baskets, or as a border plant.
  • Benefits from being planted alongside cabbage, broccoli, tomatoes, strawberries, eggplants, and rosemary.
  • Intercropping: Pair with tomatoes, capsicums, broccoli, or strawberries to deter pests.
  • Crop Rotation: Use as companions or rotate after heavy feeders. Perennials (rosemary, thyme, lavender) stay in place longer.
  • Soil Rejuvenation: Enhance soil microbes; use as borders between cycles.
  • Avoid plants requiring high moisture, like basil or cucumbers, which may create an unsuitable environment for thyme.
